If on the other hand you're talking about zombie arcade and five then at the main menu

repeatedly tap both back triggers, once up go to the computer at the back of the room and type 3arc unlockBlack ops zombie maps?

Either complete the main storyline, or break out the chair and head to the small computer then enter "3arc unlock" (space between this of course) and there you go.
